In a small bowl, combine warm water, sugar, and yeast. Let sit for 10 minutes. In a large bowl, combine flour and salt. Mix in yeast mixture and melted butter. Mix until a dough forms. Knead dough on a floured surface until smooth.
Place dough into a large greased bowl, turning to coat. Cover and let rise for 1-2 hours. Preheat oven to 400 F. Deflate dough and divide into small pieces roll each into a small ball.
Place water and baking soda in a large saucepan over medium heat. Bring to a boil. Drop pretzel bites in batches into the water. Let boil for 20-30 seconds. Remove pretzels with a slotted spoon and place onto a large greased baking sheet.
Bake for 10-12 minutes. In a small bowl, combine sugar and cinnamon. Dip each pretzel bite into the melted butter, then roll into the cinnamon sugar.
