Chocolate Peppermint Bundt Cake

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3 large eggs
  • 2 cups milk
  • 1 cup vegetable oil
  • 1 teaspoon peppermint extract
Ingredients for Peppermint Glaze
  • 1 1/2 cups powdered sugar
  • 4 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • crushed peppermint candy, for garnish

Method
 

  1. Preheat oven to 350 F. Grease a 9-inch bundt cake pan. In a large bowl, whisk together flour, sugar, cocoa powder, salt, baking powder and baking soda.
  2. Whisk in eggs, milk, vegetable oil and peppermint extract, whisk until smooth. Pour cake batter into the prepared cake pan. Bake for 40-45 minutes. Let cool, and turn out onto a plate. Let cool completely.
  3. For the glaze, in a medium bowl, combine powdered sugar, milk and peppermint extract until smooth. Drizzle glaze over cooled cake and garnish with crushed peppermint candy.
