Black Bean Soup

Ingredients
  

  • 2 ( 15 oz.) cans black beans, drained
  • 1 ( 14 oz.) can diced tomatoes, undrained
  • 2 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika

Method
 

  1. Place black beans, undrained diced tomatoes, vegetable broth, salt and paprika into a large saucepan over medium heat.
  2. Simmer soup for 10 minutes, until all of the ingredients are heated through. Blend soup with an immersion blender until smooth. Continue to simmer soup over medium heat for another 5-10 minutes.
