In a small bowl, combine warm water, sugar, and yeast. Let sit for 10 minutes. In another large bowl, combine flour and salt. Add in melted butter and yeast mixture. Mix until a dough forms.
Knead on a floured surface until smooth. Place dough into a large greased bowl, turning to coat. Cover and let rise for 1-2 hours.
Deflate dough, divide into small balls. Preheat air-fryer to 350 F. In a large saucepan over medium heat, bring water and baking soda to a simmer. Place pretzel bites in batches in water, boil for 20 seconds. Remove from water and set aside.
Sprinkle with salt. Air-Fry in batches for 5-6 minutes.
