Easy and buttery shortbread cookies with a classic red velvet flavor, and filled with white chocolate chips. These easy shortbread cookies make the perfect cookie Christmas or Valentine’s day. Everyone will love the buttery texture of the shortbread cookie combined with the classic red velvet flavor of these cookies.

The cookie dough is started with a classic shortbread cookie dough, except with the addition of cocoa powder and red food coloring to give these cookies the classic red velvet flavor and look. White chocolate chips are also added to the cookie dough. Roll the cookie dough into balls, and flatten slightly. Bake until the bottom of the cookies are lightly browned. Let cool completely on a cooling rack before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • red food coloring
  • 1/2 cup white chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine butter with powdered sugar until fluffy. Add in flour, cocoa powder, and vanilla extract until combined.
  • Add in red food coloring, and mix until it is fully red. Fold in white chocolate chips. Roll the cookie dough into balls, and flatten slightly.
  • Place cookies onto a large ungreased baking sheet and bake for 10-12 minutes.
