Chewy chocolate brownie cups topped with a delicious strawberry cookie dough made from a box of strawberry cake mix. The chocolate flavor from the brownies and strawberry flavor from the cookie dough, go perfectly together in these easy brookie cups. These easy brookie cups are easy to make, and they make the perfect dessert to bake this Valentine’s day for a sweet and easy treat that everyone will love.

The brownie batter is made by whisking all of the brownie ingredients together until smooth. You can also use a box of brownie mix instead to save on time and prepare it according to package directions. For the cookie dough, the strawberry cake mix is mixed with eggs and vegetable oil until smooth. The brownie batter is evenly divided between the prepared muffin pan and topped with the cookie dough. Bake until each brookie cup comes out clean with a toothpick.

Strawberry Brookie Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 ( 15 oz.) box strawberry cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract until smooth.
  • In a large bowl, whisk together cake mix with eggs and vegetable oil until smooth. Evenly divide the brownie batter between the prepared muffin pan. Top with the cookie dough. Bake for 20-25 minutes.
