Spinach and Tomato Grilled Cheese Sandwich

Grilled cheese sandwiches are a favorite classic comfort food to serve on a cold day. But instead of your usual grilled cheese with cheddar cheese. This grilled cheese is made with fresh spinach, tomato, and instead of using cheddar cheese, provolone cheese is used. Serve this easy cheesy dish with a side of chips or with your favorite bowl of soup for the perfect winter meal.
This sandwich is quick and easy to put together. Just like a regular grilled cheese, mayo is spread onto each slice of bread. Fresh leaves of spinach, slices of tomato and one slice of provolone cheese are added and topped with the other slice of bread. Spread the outsides with softened butter and cook on a skillet over medium heat, until both sides are golden browned.

Ingredients
  

  • 4 slices bread
  • 2 tablespoons mayonnaise
  • fresh spinach leaves
  • 1 roma tomato, sliced
  • 2 slices provolone cheese
  • butter, softened

Instructions
 

  • Evenly spread 1/2 tablespoon mayonnaise onto one side of each slice of bread. Top 2 slices of bread with spinach, tomato and cheese.
  • Top with the remaining slices of bread, mayo side down. Spread butter on the outsides of the bread. Cook on a skillet over medium heat, cook until golden browned on both sides.
