Fluffy homemade cornbread is the perfect side dish to go with any meal. But with the added cilantro and can of green chilies, this cornbread is perfect for serving with any tex-mex themed meal. This cornbread is fluffy and delicious, with a little bit of spice added to the bread. The cornbread is spiced with chili powder and ground cumin, creating a delicious and slightly spicy side dish.

The cornbread batter is made by whisking equal parts flour and cornmeal with sugar, salt, baking powder, and spices. Milk, egg, oil, green chilies, and shredded cheddar cheese are mixed into the dry ingredients until a smooth thick batter forms. Spread the batter into a greased round 9-inch baking dish. Bake until the top of the cornbread is lightly golden browned and the center comes out clean with a toothpick.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 teaspoon chopped cilantro
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1 cup milk
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1 ( 2 oz.) can green chilies
  • 2 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 400 F. In a large bowl, whisk together flour, cornmeal, sugar, salt, baking powder, cilantro, chili powder, and cumin.
  • Add in milk, egg, oil, green chilies, and cheese. Whisk until smooth. Pour batter into a greased round 9-inch baking dish. Bake for 25-30 minutes.
