Chocolate fudge brownies topped with a soft and chewy cinnamon snickerdoodle cookie. These easy brookie cups are perfect for when you want both a brownie and a cookie. They are delicious combined together. Cookie dough is baked over brownies and topped with a mixture of cinnamon and sugar. And they are baked in muffin cups, making them perfect for serving to a group of people at any occasion.

The brownie batter is easy to make, because all of the ingredients are whisked together in the same bowl. You can also use a pre-made box of brownies instead and prepare them according to package directions. The cookie dough is a sugar cookie dough, but you can also use premade sugar cookie dough instead. Cinnamon and sugar are sprinkled over each brookie cup and baked until the center of each cup comes out clean with a toothpick.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, baking soda, and cream of tartar.
  • Add in the eggs, melted butter, and vanilla extract, whisk until smooth. In a medium bowl, whisk together flour, salt, baking soda, and cream of tartar. In a large bowl, combine butter with sugar until fluffy.
  • Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture until it is fully combined. In a small bowl, combine sugar and cinnamon.
  • Evenly divide the brownie batter between the paper liners. Evenly top with the cookie dough. Sprinkle with the cinnamon sugar mixture. Bake for 15-20 minutes.
