Quick and easy vegetarian dinner with all of the classic flavors of lasagna. It is so quick and easy to make this dish, it takes less than 30 minutes, from start to finish. Lasagna is a favorite for dinners, but it takes a long time to prepare and bake. But with this skillet lasagna, there is no layering and no baking. Making this meal a great easy busy weekday meal that everyone will love. Serve with a side of salad and garlic bread for a delicious and filling vegetarian meal.

You can have this meal ready in less than 30 minutes. The pasta will first need to be broken into pieces and boiled according to package directions. Drain and set aside while you prepare the sauce. Heat olive oil in a large skillet and cook the minced garlic and onion until softened and fragrant. Stir in marinara sauce and let it cook for a few minutes to heat through. The cooked pasta along with all three of the cheese is added and to the mixture, let heat through for a few minutes, until the cheese has melted.

Ingredients
  

  • 12 lasagna noodles, broken
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup diced onion
  • 1 ( 24 oz.) jar marinara sauce
  • 1/2 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions
 

  • Cook lasagna noodles according to package directions, drain and set aside. In a large skillet over medium heat, heat olive oil. Cook garlic and onion until fragrant.
  • Add in marinara sauce, let simmer for 5-7 minutes. Add in lasagna noodles, ricotta cheese, parmesan cheese, and mozzarella cheese. Let cook until the cheese has fully melted and everything is heated through.
