Sheet Pan Meatloaf

Tender and juicy meatloaf made on a sheet pan and cooked with delicious roasted potatoes and green beans. With this meal, you get a whole meal in one. There is no need to cook the sides, because the sides are already cooking with the main meal. Sheet pan meals make a great way to cook a low prep meal, because the main dish and the sides get to cook together with very little prep from you. Make this meal for a quick and easy dinner that everyone will love. 

The meatloaf is made with ground beef, breadcrumbs, seasonings and a egg. Form the meatloaf into four mini loaves and set onto a large greased baking sheet. Leaving room to add the vegetables onto the pan. For the vegetables, combine the potatoes and green beans with olive oil and seasonings. Spread around the meatloaves and bake until the vegetables are roasted and crispy and the meatloaf is tender and juicy. About halfway through cooking, brush the meatloaves with a brown sugar ketchup glaze.

Ingredients
  

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 large egg
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 teaspoons mustard

Ingredients for Green Beans and Potatoes

  • 1/2 pound green beans, trimmed
  • 2 large potatoes, cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Preheat oven to 400 F. In a large bowl, combine ground beef, breadcrumbs, seasonings, and egg. Form mixture into 4 mini meatloafs. Place on a large greased baking sheet.
  • In a medium bowl, combine potatoes with green beans, olive oil, salt, and pepper. Spread evenly around the meatloaves. Bake for 20 minutes. In a small bowl, combine ketchup, brown sugar, and mustard. Remove from oven, brush each meatloaf with the brown sugar glaze. Bake for another 20-25 minutes.
