Rigatoni Mac and Cheese Bake

Creamy and cheesy mac and cheese, made using rigatoni shaped pasta. The pasta is covered in a delicious cheesy sauce with two types of cheese. And then it is baked, topped with more cheese. This delicious mac and cheese is perfect for any occasion, it will make a fun twist on a classic mac and cheese.

The rigatoni pasta is first cooked according to the package directions, drain the pasta and set it into a large bowl. For the creamy cheese sauce, butter is melted in a large saucepan. Cook flour in the butter for a minute to brown. Then add in milk, salt, pepper, grated parmesan cheese, and half of the cheddar cheese. Cook the sauce until the cheese is fully melted and the sauce is thickened. Mix the sauce with the pasta. Spread it out into a greased baking dish. Top with more cheese, and bake until it is fully melted.

Rigatoni Mac and Cheese Bake

Ingredients
  

  • 16 oz. rigatoni pasta
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded cheddar cheese, divided

Instructions
 

  • Preheat the oven to 350 F. Cook pasta according to package directions. Drain. In a large saucepan over medium-low heat, melt butter. Add in flour, and cook for a minute to brown.
  • Pour in milk, salt, pepper, grated parmesan cheese, and 1 cup shredded cheddar cheese. Continue to cook the sauce, while whisking until the cheese has fully melted, and the sauce has thickened.
  • Mix the sauce with the cooked pasta. Spread out into a greased baking dish. Top with the remaining shredded cheddar cheese. Bake for 20-25 minutes.
