Red Velvet Shortbread Cookies

Buttery classic shortbread cookies with a fun Valentine’s day twist to them. These cookies have all of the classic flavors of a red velvet cookie made into a shortbread cookie. They are buttery and delicious. Everyone will love these easy cookies for Valentine’s day or Christmas.

The cookie dough is made like a classic shortbread cookie, with the addition of cocoa powder and red food coloring mixed into the dough. The dough is rolled into balls, and flattened slightly. Place the cookies onto a large baking sheet and bake until the bottom of the cookies are lightly browned. Let the cookies cool on a wire rack completely before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • red food coloring

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine butter with powdered sugar until fluffy. Add in flour, cocoa powder, and vanilla extract, and mix until combined. Add in the red food coloring, and mix until it is fully red.
  • Roll the cookie dough into balls, and flatten each one slightly. Place cookies onto a large ungreased baking sheet. Bake for 10-12 minutes.
