Red Velvet Cheesecake Brownie Bites

Chewy chocolate red velvet brownie bites mixed with a sweet and creamy cheesecake filling. These red velvet cheesecake brownie bites make the perfect easy dessert to make this Valentine’s day. They are perfectly portioned out into cups for easy serving. These would be great for a Valentine’s day party for a group of people, or just to make for a fun treat with your family.

The brownie batter is quick and easy to make, all of the ingredients are whisked together in the same bowl. Red food coloring is added to the batter to make them red velvet. The brownie batter is evenly divided between 12 paper lined muffin cups. For the cheesecake filling, cream cheese is mixed with sugar, an egg, and vanilla extract. Evenly divide the cheesecake filling over the brownie batter, and swirl it with a knife. Bake until the center of each cup comes out clean with a toothpick.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • red food coloring
  • 8 oz. cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda.
  • Add in eggs, melted butter, and vanilla extract, whisk until smooth. Add in the food coloring, and mix until it is fully red.
  • In a large bowl, combine cream cheese, sugar, egg, and vanilla extract, mix until smooth.
  • Evenly divide the brownie batter into the prepared muffin pan. Top with the cheesecake filling, swirl with a knife. Bake for 15-20 minutes.
