Ranch Mac and Cheese Biscuit Cups

Creamy and cheesy mac and cheese, seasoned with a packet of ranch seasoning mix. The mac and cheese is baked in fluffy biscuit dough, and topped with crispy french fried onions. These easy mac and cheese cups make the perfect easy appetizer for any meal.

The mac and cheese sauce is made like a classic cheddar cheese sauce, except with the addition of ranch seasoning mix. Divide the mac and cheese into biscuit cups, and top with french fried onions. Bake until the cups are lightly golden browned.

Ranch Mac and Cheese Biscuit Cups

Ingredients
  

  • 16 oz. elbow pasta
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1 ( 1 oz.) packet ranch seasoning mix
  • 2 1/2 cups milk
  • 2 cups shredded cheddar cheese
  • 2 cans biscuits
  • french fried onions

Instructions
 

  • Preheat the oven to 350 F. Cook pasta according to package directions, drain. In a large saucepan over medium heat, melt butter. Add in flour and ranch seasoning mix. Cook for a minute to brown.
  • Add in the milk and cheese, cook until the cheese has fully melted, and the sauce has thickened. Mix the sauce with the pasta. Separate the biscuit dough, and place one in a greased muffin pan. Fill each biscuit with the mac and cheese.
  • Top with the fried onions. Bake for 12-15 minutes.
