Fall means it is pumpkin spice season for everything from coffee creamers to desserts. Making these pumpkin spice rice krispie treats are the perfect fall snack. Rice krispie treats are a fun treat to enjoy any time of the year, but with the addition of pumpkin puree and pumpkin pie spice they make a fun fall snack or dessert. They are quick and easy to make with no baking required, all of the cooking is done on the stove top. Or you can even make them in the microwave instead.

These pumpkin spice rice krispie treats are made in the same way as regular rice krispie treats, except pumpkin puree and pumpkin pie spice are added to them. To help keep the mixture from sticking, I like to spray a spatula with non stick cooking spray to keep the melted marshmallows from sticking to it. Melt butter into a large saucepan over medium heat, add in mini marshmallows and stir until they are completely melted. Add in pumpkin puree, vanilla extract and pumpkin pie spice. Remove the mixture from heat and gently fold in the rice krispie cereal. Evenly press the mixture into a 9×13-inch baking dish. Or you can shape them into pumpkins or cut them out with cookie cutters instead.

Ingredients
  

  • 6 cups rice krispie cereal
  • 3 tablespoons butter
  • 4 cups mini marshmallows
  • 2 tablespoons pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice

Instructions
 

  • Melt butter in a large saucepan over medium heat. Add mini marshmallows and stir until melted. Stir in pumpkin puree, vanilla extract and pumpkin pie spice.
  • Remove from heat and stir in rice krispie cereal until evenly coated. Press mixture out into a 9x13-inch baking dish. Let cool completely. Cut into bars.
