Peanut Butter Oatmeal Reese’s Pieces Cookie Pie

Soft and chewy peanut butter cookie pie with oatmeal and filled with Reese’s pieces candies. The cookie dough is baked in a round pie plate. Everyone will love this easy and delicious dessert for any holiday or occasion. Serve topped with whipped cream or ice cream.

The cookie dough is made similar to a classic peanut butter oatmeal cookie dough, except for the addition of Reese’s pieces folded into the cookie dough. Press the cookie dough into a greased round pie plate. Bake until the center comes out clean with a toothpick. Let cool completely before cutting into slices and serving.

Peanut Butter Oatmeal Reese's Pieces Cookie Pie

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup Reese's pieces

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, mix together butter, peanut butter, brown sugar, and granulated sugar until fluffy.
  • Add in the egg and vanilla extract and mix until it is fully smooth. Add in the flour mixture and mix until it is fully combined. Fold in the Reese's pieces.
  • Press the cookie dough into a greased round 9-inch pie plate. Bake for 20-25 minutes.
