Pumpkin Chocolate Chip Pancakes

The pancake batter is made similar to a classic pancake batter, except for the addition of pumpkin pie spice and pumpkin puree mixed into the batter. Chocolate chips are also folded into the pancake batter. Ladle batter onto a hot greased skillet or griddle. Cook until both sides of the pancakes are lightly browned.

Pumpkin Chocolate Chip Pancakes

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 cup pumpkin puree
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 1/2 cups milk
  • 1 cup chocolate chips

Instructions
 

  • In a large bowl, whisk together flour, brown sugar, salt, pumpkin pie spice, baking powder, and baking soda. Add in the pumpkin puree, melted butter, eggs, and milk. Whisk until smooth.
  • Fold in the chocolate chips. Ladle the pancake batter onto a large greased skillet over medium-low heat. Cook until bubbles start to form. Flip and cook other side until lightly browned.
