Pepper Jack Roasted Broccoli

Cheesy oven-roasted broccoli covered with spicy and delicious pepper jack cheese. This easy roasted broccoli makes a great way to enjoy your vegetables with dinner. This dish is very low prep because you start with frozen broccoli florets that don’t need to be pre-steamed first. After the broccoli is crispy roasted in the oven, top with pepper jack cheese and let melt for a delicious and easy side dish that everyone will love. 

I used broccoli florets for this dish, you can also use fresh chopped broccoli florets instead if you would rather. Mix the broccoli with olive oil and some seasonings. Then spread out into a baking sheet and roast in the oven until lightly browned and crispy. Top with the shredded pepper jack cheese and bake for few more minutes, just until the cheese has melted.

Ingredients
  

  • 12 oz. frozen broccoli florets
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup shredded pepper jack cheese

Instructions
 

  • Preheat oven to 400 F. In a large bowl, combine broccoli florets, olive oil, and seasonings. Spread out into a greased baking sheet.
  • Bake for 25-30 minutes. Top with cheese. Bake for another 5-10 minutes.
