Pepper Jack Creamed Spinach Casserole

Creamy and cheesy creamed spinach casserole topped with spicy pepper jack cheese and crispy french fried onions. Everyone will love this easy and cheesy casserole for any occasion, like a weeknight dinner, or as a Thanksgiving or Christmas dinner.

The only five ingredients that you need is 2 bags of frozen spinach that are thawed, cream cheese, a can of cream of mushroom soup, pepper jack cheese, and french fried onions. Mix the spinach with cream cheese, cream of mushroom soup, and half of the onions. Spread the mixture into a round baking dish. Top with the pepper jack cheese and the remaining onions. Bake until the cheese is melted and the onions are crispy.

Ingredients
  

  • 2 ( 12 oz.) bags frozen spinach
  • 8 oz. cream cheese, softened
  • 1 ( 10 oz.) can cream of mushroom soup
  • 1 cup shredded pepper jack cheese
  • 1 ( 6 oz.) container french fried onions

Instructions
 

  • Preheat the oven to 350 F. Thaw spinach according to package directions. In a large bowl, mix spinach with cream cheese until smooth. Add in the cream of mushroom soup and 1/2 of the onions until combined.
  • Spread the mixture into a greased round baking dish. Top with the pepper jack cheese and remaining onions. Bake for 25-30 minutes.
