I love to cook vegetables in the oven because it is the least time consuming way to cook them. Carrots are an easy vegetable to bake, because all you have to do is peel and dice the carrots. No need to boil them before, baking them creates tender perfectly cooked carrots. You can season them any way that you want, savory or sweet. These roasted carrots make the perfect addition to any meal, or even to serve as a holiday side dish.

I used fresh carrots for this, but you can also use baby carrots. Although if you decide to use baby carrots instead, you may need to bake them longer, until they are tender. If you are using fresh carrots, peel and wash them then slice them into 1-inch pieces. For the seasonings, I used salt, pepper, garlic powder and paprika to make them a little spicy. I also added in some minced garlic to give the carrots some more flavor. But you can use any spices and flavorings that you want. If you want more sweet flavored carrots, instead of the garlic and paprika use brown sugar and cinnamon instead.

Oven-Roasted Carrots

Ingredients
  

  • 2 pounds fresh carrots
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika

Instructions
 

  • Preheat oven to 400 F. Peel and dice carrots into 1-inch pieces. Mix carrots with olive oil, minced garlic, slat, pepper, garlic powder and paprika.
  • Spread carrots out into a lightly greased baking dish. Bake for 20-25 minutes.
