Mint Chocolate Chip Oreo Cookies

Soft and chewy mint chocolate chip cookies filled with crushed Oreo cookies. These easy delicious cookies make the perfect treat for St. Patrick’s day as a fun alternative to a classic mint chocolate chip cookie. Everyone will love the mint flavor along with the chocolate chips and Oreo cookie flavor.

The cookie dough is made just like a classic mint chocolate chip cookie dough, except for the addition of crushed Oreo cookies folded into the cookie dough. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Mint Chocolate Chip Oreo Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • green food coloring
  • 1/2 cup crushed Oreo cookies
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy.
  • Add in egg and mint extract and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Add in the green food coloring, and mix until it is fully green.
  • Fold in the crushed Oreo cookies and chocolate chips. Use a cookie scoop to place the cookie dough onto a large ungreased baking sheet. Bake for 10-12 minutes.
