Mint Chocolate Chip Cookie Dough Pretzel Bites

Quick and easy cookie dough pretzel bites made using a delicious homemade edible mint chocolate chip cookie dough. The cookie dough is made edible because the flour is heated in the microwave, and no egg is used. The cookie dough is stuffed between two pretzels and dipped in melted chocolate. They make the perfect sweet and salty treat to serve for St. Patrick’s day.

The cookie dough is made by first heating the flour in the microwave for about 40 seconds. The butter is mixed with sugar until fluffy, the peppermint extract and flour are added in and mixed until a thick dough forms. Add in green food coloring, and mix until it is fully green. Fold in the chocolate chips. Evenly divide the cookie dough between pretzels, and sandwich with another pretzel. Refrigerate while you melt the chocolate. Melt the chocolate chips in the microwave until it is fully melted and smooth. Dip half of each pretzel bite into the melted chocolate. Set onto plates, and let sit until the chocolate has fully set.

Mint Chocolate Chip Cookie Dough Pretzel Bites

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour, heated in the microwave
  • 1 teaspoon peppermint extract
  • green food coloring
  • 1/2 cup chocolate chips
  • 12 oz. chocolate chips
  • pretzels

Instructions
 

  • Place the flour into a microwave-safe bowl. Heat in the microwave for 40 seconds, set aside. In a large bowl, mix butter with sugar until fluffy.
  • Add in the peppermint extract, and mix until smooth. Add in the flour, and mix until it is fully combined. Add in the green food coloring, and mix until it is fully green. Fold in the chocolate chips.
  • Place the pretzels onto a plate in a single layer. Place a small amount of the cookie dough onto each pretzel. Sandwich with another pretzel. Refrigerate for at least 20 minutes.
  • Place the chocolate chips in a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring well until it is fully melted smooth. Dip each pretzel bite into the melted chocolate, and set back onto plates. Let sit until the chocolate has completely set.
