Juicy classic meatloaf made into mini cups. These meatloaf muffins have all of the flavors of a classic meatloaf, but it is made into the mini cups being baked in a muffin tin. All topped with a classic sweet brown sugar and ketchup glaze.  Because these mini meatloafs are smaller, they take much quicker to cook. Instead of the usual hour it takes to bake meatloaf, these mini meatloaf muffins are ready in 30 minutes. Serve these meatloaf cups with mashed potatoes and your favorite vegetables for a quick and easy dinner.

To make the meatloaf mixture, ground beef is mixed with some seasonings, milk, egg, ketchup, mustard and breadcrumbs. Press the meatloaf mixture into greased muffin cups and top with the tasty brown sugar glaze. To make the sweet brown sugar glaze, brown sugar is mixed with ketchup and mustard until a thick glaze forms. Evenly spread the glaze over each meatloaf muffin. Bake until the meat is no longer pink and the meat is cooked through.

Ingredients
  

  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/3 cup milk
  • 1 large egg
  • 1 tablespoon ketchup
  • 2 teaspoons mustard
  • 1/4 cup breadcrumbs

Ingredients for Brown Sugar Glaze

  • 4 tablespoons brown sugar
  • 2 tablespoons ketchup
  • 1 teaspoon mustard

Instructions
 

  • Preheat oven to 350 F. In a large bowl, combine ground beef, salt, pepper, garlic powder, paprika, dried oregano, milk, egg, ketchup, mustard and breadcrumbs.
  • Spoon the meatloaf mixture into 12 greased muffin cups. For the brown sugar glaze, in a small bowl, combine brown sugar, ketchup and mustard. Evenly spread the glaze over each muffin. Bake for 25-30 minutes.
