Warm sweet cinnamon rolls with all of the flavors of a classic gingerbread cookie. While having the fluffy texture of a homemade cinnamon roll. These delicious cinnamon rolls are made by a sweet yeast dough with molasses and spices added into the dough. Giving the rolls a classic gingerbread flavor. Filled with a sweet brown sugar and cinnamon filling, with ground ginger and nutmeg added to the filling. All topped off with a sweet and delicious cream cheese glaze. These sweet rolls will make a great lazy weekend breakfast or brunch.

The dough for the cinnamon rolls is started with a sweet yeast dough. Milk, eggs and butter in the dough will make these rolls fluffy and tender. Molasses are added into the dough along with cinnamon, ginger, nutmeg and cloves, giving the rolls a classic gingerbread flavor. After the dough is kneaded and smooth, place it into a large lightly greased bowl. Allow the dough to rise for 1-2 hours, or until it has doubled in size.

Deflate the dough and roll it into a long rectangle, spread softened butter all over the dough. Sprinkle a mixture of brown sugar, cinnamon, ginger and nutmeg over the butter and roll the dough into a tight long log. Cut the log even size rolls and place into a large greased baking dish. At this point, you can cover the pan and refrigerate the rolls overnight. When you are ready to bake the rolls, let them sit at room temperature for 30-60 minutes. Bake the cinnamon rolls until they are lightly browned. To make the cream cheese glaze, beat cream cheese and softened butter with powdered sugar, milk and vanilla extract until smooth and creamy. Drizzle the glaze over the warm cinnamon rolls.

Ingredients
  

  • 1 cup warm milk
  • 2 1/2 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 large eggs
  • 1/4 cup butter, melted
  • 1/4 cup molasses

Ingredients for the Filling

  • 4 tablespoon butter, softened
  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Ingredients for Cream Cheese Glaze

  • 4 oz. cream cheese, softened
  • 4 tablespoons butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions
 

  • In a small bowl, combine warm milk, 1 teaspoon sugar and yeast. Let sit for 10 minutes. In a large bowl, combine flour, remaining sugar, salt, cinnamon, ginger, nutmeg and cloves. Add in yeast mixture, eggs, melted butter and molasses. Mix until a dough forms.
  • Knead dough on a floured surface until smooth. Place dough into a large greased bowl, turning to coat, cover and let rise for 1-2 hours, or until doubled in size. Preheat oven to 350 F. for the filling, in a small bowl, combine brown sugar, cinnamon, ginger and nutmeg.
  • Deflate dough and roll out into a long rectangle. Evenly spread the softened butter onto the dough, leaving a 1-inch edge around the sides. Sprinkle with the brown sugar mixture. Roll up into a long log and cut into 12 even rolls. Place rolls into a greased baking dish. Cover and let rise for 30-60 minutes.
  • Bake for 25-30 minutes. For the cream cheese glaze, using a mixer, beat the softened cream cheese and butter with powdered sugar, milk and vanilla extract until smooth. Evenly spread onto warm cinnamon rolls.
