After Thanksgiving there are usually tons of leftover food. Leftover mashed potatoes a delicious used in fresh homemade dinner rolls. The rolls won’t taste like mashed potatoes, but they will make them more fluffy and tender. Bake these rolls with some leftover mashed potatoes for a delicious way to use up the leftovers. You can even make these rolls for Christmas dinner with some fresh mashed potatoes, for a delicious fluffy and butter bread roll. Serve warm with butter.

This bread dough is made with a classic fluffy yeast bread dough. It is started by activating the yeast in a mixture of warm water and sugar. In a large bowl, combine the flour and salt and mix it with the activated yeast mixture, warm milk, egg, melted butter and the leftover mashed potatoes. Knead the dough on a floured surface for a couple of minutes, until the dough in smooth. Place it into a large greased bowl, turning to fully coat in the oil. Cover and let rise for 1-2 hours, or until doubled in size. Deflate the dough into roll into balls. Place into greased baking dishes and let rise for another 30 minutes. Bake until the tops of the rolls are lightly golden browned.

Ingredients
  

  • 1/2 cup warm water
  • 1 teaspoon granulated sugar
  • 1 tablespoon active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup warm milk
  • 1 large egg
  • 1/4 cup melted butter
  • 1 cup mashed potatoes

Instructions
 

  • In a measuring cup, combine water, sugar and yeast, let sit for 10 minutes. In a large bowl, combine flour and salt. Add in yeast mixture, warm milk, egg, melted butter and mashed potatoes. Mix until a dough forms.
  • Knead dough on a floured surface until smooth. Place dough into a large greased bowl, turning to coat. Cover and let rise for 1-2 hours, or until doubled in size.
  • Preheat oven to 400 F. Deflate dough and divide into even pieces. Roll each piece into a ball and place into a lightly greased baking dish. Cover and let rise for another 30-60 minutes. Bake for 15-18 minutes.
