These mashed potato cups taste great as an appetizer or side dish to just about any main meal. It is creamy and cheesy topped with crispy bacon.
You can either use leftover mashed potatoes for this dish, or you can make a batch of mashed potatoes instead. The mashed potatoes are mixed with egg and breadcrumbs. Then divided into a greased muffin tin. Top with shredded cheddar cheese and cooked and crumbled bacon. Bake until the mashed potatoes are heated through and the cheese has fully melted.
Mashed Potato Cups
Ingredients
- 2 cups leftover mashed potatoes
- 1 large egg
- 1/4 cup breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked and crumbled bacon
Instructions
- Preheat oven to 350 F. In a large bowl, mix together mashed potatoes, egg, breadcrumbs, salt, and pepper. Evenly divide mashed potato mixture into 12 greased muffin cups.
- Top each with shredded cheddar cheese and bacon. Bake for 20-25 minutes.
