Mashed Potato Cups

Ingredients
  

  • 2 cups leftover mashed potatoes
  • 1 large egg
  • 1/4 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked and crumbled bacon

Instructions
 

  • Preheat oven to 350 F. In a large bowl, mix together mashed potatoes, egg, breadcrumbs, salt, and pepper. Evenly divide mashed potato mixture into 12 greased muffin cups.
  • Top each with shredded cheddar cheese and bacon. Bake for 20-25 minutes.
