Mashed Potato Cups

Ingredients
  

  • 2 cups leftover mashed potatoes
  • 1 large egg
  • 1/4 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked and crumbled bacon

Method
 

  1. Preheat oven to 350 F. In a large bowl, mix together mashed potatoes, egg, breadcrumbs, salt, and pepper. Evenly divide mashed potato mixture into 12 greased muffin cups.
  2. Top each with shredded cheddar cheese and bacon. Bake for 20-25 minutes.
