These creamy and easy garlic and parmesan mashed cauliflower look just like mashed potatoes. Except that this easy side dish is healthy and delicious alternative. This mashed cauliflower is a healthy low carb way to still enjoy the creamy taste of mashed potatoes without all of the carbs from the potatoes. It is so quick and easy to make this side dish, just boil cauliflower until fork tender, then mash with the remaining ingredients until creamy. Serve with any main meal for quick and easy side dish.
Making this mashed cauliflower is similar to making mashed potatoes, the cauliflower is boiled then mashed with butter and milk to create a creamy mixture. The cauliflower is simmered in a large pot of boiling water. Drain the cauliflower and using either a hand blender or regular blender, mash the cauliflower with butter, minced garlic, milk, parmesan cheese, salt, and pepper.

Ingredients
  

  • 1 large head cauliflower
  • 2 tablespoons butter
  • 2 cloves minced garlic
  • 2 tablespoons milk
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Chop cauliflower into florets and place into a large saucepan over medium heat. Cover with water and boil until fork tender. Drain and mash cauliflower with butter, minced garlic, milk, grated parmesan cheese, salt, and pepper using a hand blender until smooth.
