These brookie cups make the perfect Mardi Gra dessert because the cookie dough make with sprinkles in traditional Mardi Gra colors, green, purple, and gold. Everyone will love this combination of brownies and cookies.

The brownie batter is quick and easy to make, all of the ingredients are whisked together in a large bowl. You can also use a box of brownie mix instead and prepare it according to package directions. For the cookie dough, it is made like a classic sugar cookie dough, with the addition of green, purple, and gold colored sprinkles mixed into the cookie dough. Evenly divide the brownie batter between a lined muffin pan. Top with the cookie dough, and bake until each cup comes out clean with a toothpick.

• 1 cup all-purpose flour
• 1 cup granulated sugar
• 1/2 cup cocoa powder
• 1/2 teaspoon salt
• 1/2 teaspoon baking soda
• 2 large eggs
• 1/2 cup butter, melted
• 1 teaspoon vanilla extract
• 1/2 cup butter, softened
• 1 cup granulated sugar
• 1 1/2 cups all-purpose flour
• 1/2 teaspoon salt
• 1/2 teaspoon baking soda
• 1 large egg
• 1 teaspoon vanilla extract
• 1/2 cup green, purple, and gold sprinkles

Instructions

 

• Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract and mix until smooth.
• In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter and sugar until fluffy. Add in egg and vanilla extract and mix until smooth.
• Add in the flour mixture, and mix until it is fully combined. Fold in the sprinkles. Evenly divide the brownie batter between the prepared muffin pan. Top each brownie layer with the cookie dough. Bake for 20-25 minutes.
