A cool macaroni salad and a creamy coleslaw are the two most classic summer side dishes. The combination of these two dishes creates one delicious side dish that goes perfectly with burgers or barbecue chicken. This pasta makes a great make ahead dish, that you can make the day before you need it. This creamy pasta is filled with coleslaw, celery, and bell peppers. This pasta dish makes the perfect dish to serve for any occasion.
For the pasta, I used elbow noodles, but you can also use any small shaped pasta, such as small shell or rotini pasta. After the pasta has cooked, rinse it with cold water and mix with a bag of coleslaw mix, onion, celery, green bell pepper, mayonnaise, sugar, and seasonings. Cover and refrigerate for at least 2 hours, or until serving.
Macaroni Coleslaw Salad
Ingredients
- 16 oz. elbow noodles
- 1 package coleslaw mix
- 1/2 cup diced onion
- 2 stalks celery, diced
- 1 green bell pepper
- 2 cups mayonnaise
- 1 teaspoon granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Cook pasta according to package directions, drain and rinse with cold water. Mix pasta with coleslaw mix, onion, celery, green pepper, mayonnaise, sugar, salt, and pepper.
- Cover and refrigerate until serving.
