Cookies and Cream Brownie Ice Cream Cake

Delicious homemade ice cream cake with a brownie crust and cookies and cream ice cream. This easy and delicious frozen treat is great for making during the summer. Homemade brownies are covered with ice cream and Oreo cookies. And topped with whipped cream and chocolate syrup for a delicious summer treat. You can make this ice cream cake ahead of time, and keep it in the freezer until you are ready to serve.

The brownie is baked first, you can either make the brownies homemade, or you can use a premade box mix and bake it according to package directions. After the brownie has baked, let it cool completely before adding on the ice cream. Softened cookies and cream ice cream is spread onto the cooled brownies, along with 12 whole Oreo cookies. The cake is then topped off with whipped cream and drizzled with chocolate syrup. Cover and refrigerate for at least 4 hours, or until you are ready to serve.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 quart cookies and cream ice cream, softened
  • 12 oreo cookies
  • 1 container whipped cream
  • chocolate syrup

Instructions
 

  • Preheat oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking powder. Add in melted butter, eggs, and vanilla extract, whisk until smooth.
  • Pour brownie batter into a greased baking dish. Bake for 30-35 minutes. Let cool completely. Evenly spread softened ice cream over brownie. Top evenly with Oreo cookies. Spread whipped cream on top. Drizzle with chocolate syrup. Cover and freeze for at least 4 hours.
