The dough to make these pretzel bites are easy to make, it only needs one rise before baking. Instead of twisting the pretzels, all you need to do is divide the dough into small pieces and roll each into a bite-sized ball. Combine water with baking soda in a large saucepan over medium heat. Drop the pretzel bites in batches into the boiling water and baking soda. Let the bites boil for about 20 seconds, then remove them with a slotted spoon. Place the pretzel bites onto a large baking sheet and sprinkle with salt. Bake until golden browned.

Ingredients
  

  • 1 1/2 cups warm water
  • 1 tablespoon granulated sugar
  • 1 tablespoon active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons butter, melted
  • 10 cups water
  • 1/2 cup baking soda
  • sea salt

Instructions
 

  • In a small bowl, combine warm water with sugar and yeast. Let sit for 10 minutes. In a large bowl, combine flour and salt. Add in yeast mixture and melted butter, mix until a dough forms.
  • Knead dough on a floured surface until smooth. Place dough into a large greased bowl, turning to coat. Cover and let rise in a warm place for 1-2 hours, or until the dough has doubled in size.
  • Preheat oven to 400 F. Deflate dough and divide into bite sized pieces. In a large saucepan over medium heat, bring water and baking soda to a boil. Drop pretzel bites in the water and let boil for 20-30 seconds. Remove from water with a slotted spoon.
  • Place pretzel bites onto a large greased baking sheet. Sprinkle with sea salt. Bake for 10-12 minutes.
