Fluffy and sweet vanilla cupcakes with lucky charms cereal mixed all throughout the cupcake batter. And topped with a sweet and creamy buttercream frosting, then garnished with more lucky charms cereal. The marshmallows in the cereal give the cupcakes a delicious sweet taste. These fluffy cupcakes make a sweet and delicious treat to enjoy for St. Patrick’s day.
The cupcake batter is simple to prepare, everything is combined together in one large bowl with a whisk. The lucky charms cereal is folded into the cupcake batter and divided into cupcake liners. Bake until the cupcakes are fully cooked and come out clean with a toothpick. Let the cupcakes cool completely before frosting. To make the classic vanilla buttercream frosting, softened butter is beat with powdered sugar, milk and vanilla extract until smooth. Adding in more milk or powdered sugar as needed. Pipe frosting onto cupcakes and sprinkle with more lucky charms cereal.

Ingredients

  

• 1 1/2 cups all-purpose flour
• 1 cup granulated sugar
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 2 large eggs
• 1 cup milk
• 1/2 cup vegetable oil
• 1 teaspoon vanilla extract
• 1 cup lucky charms cereal

Ingredients for Buttercream Frosting

• 1/2 cup butter, softened
• 2 cups powdered sugar
• 2 tablespoons milk
• 1 teaspoon vanilla extract
• lucky charms cereal

Instructions

 

• Preheat oven to 350 F. Line a 12 cup muffin pan with cupcake liners. In a large bowl, whisk together flour, sugar, baking powder and salt.
• Add in eggs, milk, vegetable oil and vanilla extract until smooth. Fold in lucky charms cereal. Evenly divide cupcake batter between the lined muffin pan and bake for 15-18 minutes. Let cool completely.
• In a large bowl, beat softened butter with powdered sugar, milk and vanilla extract until smooth. Pipe frosting onto cupcakes and garnish with lucky charms cereal.
