Fluffy homemade vanilla cupcakes with jelly beans stuffed in the middle of each cupcake. All topped off with a sweet fluffy buttercream frosting. The cupcake batter is so quick and easy to make, no mixer is needed all of the ingredients are whisked together in a large bowl. Divide the prepared cupcake batter between a lined muffin pan and bake until the center of each cupcake comes out clean with a toothpick. Let the cupcakes cool completely. Beat all of the frosting ingredients together until smooth and creamy. After the cupcakes have cooled, cut the center out of each cupcake, saving the top. Fill each cupcake with jelly beans and place the top of the cupcake back onto each cupcake. Pipe frosting onto cupcakes.
Jelly Bean Surprise Cupcakes
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Ingredients for Buttercream Frosting
- 1/2 cup butter, softened
- 2-3 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- jelly beans
Instructions
- Preheat oven to 350 F. Line a 12 cup muffin pan with cupcake liners. In a large bowl, whisk together flour, sugar, salt, and baking powder. Add in milk, vegetable oil, eggs, and vanilla extract, whisk until smooth.
- Evenly divide cupcake batter between the prepared cupcake liners. Bake for 15-18 minutes. Let cool completely.
- Beat softened butter with powdered sugar, milk, and vanilla extract until smooth.
- Cut the middle out of each cupcake, and place jelly beans into the center of each cupcake, place the top back onto the cupcakes. Pipe frosting onto cupcakes and decorate.
