They are made similar to a classic sugar cookie dough, except with the addition of jelly beans mixed into the cookie dough.
The dough for these cookies is prepared just like a classic soft and chewy sugar cookie dough. Except that jelly beans are folded into the dough. Refrigerate the dough for at least one hour before baking, so that the cookies will not spread out too much in the oven. After the cookie dough has chilled, roll the dough into balls and place 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes, and let cool completely on a wire rack before serving.
Jelly Bean Cookies
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup jelly beans, chopped
Instructions
- In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, beat softened butter with granulated sugar until fluffy. Add in egg and vanilla extract, beat until smooth.
- Add the dry ingredients in three additions, beating after each until all of the flour is incorporated. Fold in jelly beans. Cover and refrigerate for at least one hour.
- Preheat oven to 350 F. Roll cookie dough into balls and place 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes.
