Silver dollar pancakes are just like classic pancakes, except they are made mini. These pancakes make a fun and easy treat to enjoy for a lazy weekend breakfast or brunch. You can make these mini pancakes into skewers with fruit, or you can dip these pancakes into maple syrup for a delicious breakfast.
The pancake batter for these mini pancakes is made just like a classic pancake batter. You can even use a boxed pancake mix to save time. Spoon tablespoon-sized pancake batter onto a hot greased skillet and let cook until lightly browned on both sides, flipping once. Serve with your favorite syrup.

Homemade Silver Dollar Pancakes

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 4 teaspoon baking powder
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup butter, melted

Method
 

  1. In a large bowl, whisk together flour, sugar, salt, and baking powder. Add in eggs, milk, and melted butter, whisk until smooth. Heat a skillet over medium heat, grease with non-stick cooking spray.
  2. Spoon pancake batter into circles on the hot skillet. Cook until bubbles start to form, flip and cook until the other side is lightly browned.
