Chili is the perfect comfort food meal to warm up on a cold day. Ground beef with tomatoes and kidney beans, seasoned with spicy flavors. This chili is so easy to make, and it is ready to serve in about 30 minutes. Serve with your favorite cornbread for the perfect cold weather meal. You can top your bowl of chili with shredded cheddar cheese, or Frito chips.
This chili won’t take long to cook on the stove-top, but it can easily be made in the crock-pot as well. Diced onion and minced garlic are cooked in olive oil until fragrant. The ground beef is added to the saucepan and cooked until browned and no longer pink, breaking up the meat as it cooks. Add in the crushed tomatoes, diced tomatoes along with the juices, drained kidney beans and seasonings. The mixture is cooked until thickened. You can also make this in a crock-pot, by browning the ground beef in a large skillet and adding it to a crock-pot along with the remaining ingredients. Cover and let it cook on low for 5-6 hours, until the mixture is thickened.

Ingredients
  

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 2 cloves minced garlic
  • 1 ( 28 oz.) can crushed tomatoes
  • 1 ( 14 oz.) can diced tomatoes
  • 1 ( 15 oz.) can kidney beans, drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 teaspoons ground cumin
  • 1 tablespoon chili powder

Instructions
 

  • Heat olive oil in a large saucepan over medium heat. Cook onion and minced garlic until softened and fragrant.
  • Add in ground beef and cook over medium heat, breaking it up with a spatula as it cooks until it is no longer pink.
  • Add in crushed tomatoes, diced tomatoes along with the juices and drained kidney beans. Let simmer over medium heat for 10-15 minutes.
