A quick and easy game day appetizer that everyone will love. These crispy potato skins are filled with delicious guacamole and topped with shredded cheddar cheese. They make the perfect vegetarian option for a delicious game-day appetizer. You can make these potato skins for just about any occasion, a holiday appetizer, or an appetizer for watching the super bowl. 

The potatoes are first washed and poked with holes. Rub olive oil evenly over each potato and place onto a baking sheet. Bake until the potatoes are fork-tender. Let them cool until cool enough to handle. Once cooled, cut in half and scoop out the middles. Rub olive over the potatoes again and bake for a few more minutes to crisp. Remove from oven and fill with the guacamole and top with cheese. Bake until the cheese has fully melted. 

Guacamole Potato Skins

Ingredients
  

  • 3 large russet potatoes
  • olive oil
  • 1 cup prepared guacamole
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 400 F. Poke holes in each potato, and rub potatoes with olive oil, place onto a baking sheet. Bake for 50-60 minutes. Let cool slightly.
  • Cut potatoes in half, scoop of the middle. Rub with more olive oil, bake for 10-12 minutes. Fill with gaucamole and sprinkle with cheese. Bake for 4-5 minutes.
