Homemade Baked Popcorn Chicken

Crispy breaded popcorn chicken baked in the oven until crispy. This popcorn chicken is delicious, with oregano and basil. But instead of being fried, this chicken is baked, making it a healthier alternative with no oil. This chicken makes a great meal, or appetizer to serve on game days. Serve with your favorite dipping sauces, such as ketchup, ranch dressing, or any other of your favorite sauces.

First, cut your chicken into bite-sized pieces. In a shallow dish, whisk eggs and milk together. Combine flour and seasonings in another shallow dish. The seasonings make this chicken delicious, with the oregano, white pepper, and ground mustard. Place the breadcrumbs in the last shallow dish. First, dip chicken into the egg mixture, then coat in the flour mixture, back into the eggs, and coat in the breadcrumbs. Place onto a greased baking sheet. Bake until crispy.

Ingredients
  

  • 1 pound chicken, diced
  • 2 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon ground mustard

Instructions
 

  • Preheat oven to 400 F Cut chicken into 1-inch pieces. In a shallow dish, whisk eggs and milk together. In another shallow dish, combine flour and seasonings. Place breadcrumbs in another shallow dish.
  • Dip each chicken first in egg mixture, then fully coat in the flour mixture, dip back into the egg mixture, coat in breadcrumbs. Place onto a large greased baking sheet. Bake for 20-25 minutes.
