Guacamole Potato Skins

Ingredients
  

  • 3 large russet potatoes
  • olive oil
  • 1 cup prepared guacamole
  • 1 cup shredded cheddar cheese

Method
 

  1. Preheat oven to 400 F. Poke holes in each potato, and rub potatoes with olive oil, place onto a baking sheet. Bake for 50-60 minutes. Let cool slightly.
  2. Cut potatoes in half, scoop of the middle. Rub with more olive oil, bake for 10-12 minutes. Fill with gaucamole and sprinkle with cheese. Bake for 4-5 minutes.
