Preheat oven to 400 F. Poke holes in each potato, and rub potatoes with olive oil, place onto a baking sheet. Bake for 50-60 minutes. Let cool slightly.
Cut potatoes in half, scoop of the middle. Rub with more olive oil, bake for 10-12 minutes. Fill with gaucamole and sprinkle with cheese. Bake for 4-5 minutes.
