Summer salad with fresh green beans and cherry tomatoes. Topped with a homemade balsamic salad dressing. This light and healthy salad makes the perfect summer side dish to serve along with any meal. This salad is also a great make ahead dish. Fresh green beans and cherry tomatoes are combined together to create a cool summer salad. And served with an easy balsamic dressing made with olive oil and balsamic vinegar. This salad is great for serving with any summer meal.

Fresh green beans are used for this dish, the ends of the green beans will first need to trimmed off. Simmer the green beans in a saucepan over medium heat until they are fork tender. Drain and rinse the green beans with cold water to stop the cooking process. Place the green beans in a bowl and combine them with halved cherry tomatoes and dried basil. Cover and refrigerate until you are ready to serve. When you are ready to serve the salad, make the salad dressing. To make the balsamic salad dressing, combine olive oil, balsamic vinegar, dried basil and dried thyme in a small bowl. Divide the salad into bowls and drizzle the salad dressing over each salad.

Ingredients
  

  • 1 pound fresh green beans, trimmed
  • 1 pint cherry tomatoes, halved
  • 1/2 teaspoon dried basil

Ingredients for Balsamic Dressing

  • 4 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme

Instructions
 

  • Trim green beans and place into a medium saucepan. Cover with water and let simmer over medium heat until the green beans are tender. Drain and place into a large bowl.
  • Mix the green beans with halved cherry tomatoes and 1/2 teaspoon dried basil. For the balsamic dressing, in a small bowl combine olive oil, balsamic vinegar, dried basil and dried thyme together.
  • Drizzle balsamic dressing over each individual salad.
