You only need two easy ingredients and 5 minutes to make these tasty mini ice cream sandwiches. They are delicious and so easy to make using fudge stripe cookies and vanilla ice cream. No baking or cooking is required. You can make these ahead of time and keep a whole batch in the freezer to enjoy anytime you want a quick sweet treat this summer.
I used vanilla ice cream for these sandwiches, but any flavor of ice cream will work. Place ice cream on the back of the fudge stripe cookies and sandwich with another cookie. Store in a large freezer bag in the freezer until the ice cream has set, or until you are ready to serve.

Ingredients
- fudge stripe cookies
- vanilla ice cream, softened
Instructions
- Turn half of the fudge stripe cookies upside down. Place ice cream on the cookies. Sandwich with the remaining half of cookies. Store in a large freezer bag until serving.
