To make the cookie dough, peanut butter is mixed with a large egg, sugar, and vanilla extract until smooth. Fold the M&Ms and chocolate chips into the cookie dough. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through. Remove from the oven, and place one chocolate kiss on each cookie.
