Easter Cookie Dough Truffles

Easy homemade cookie dough truffles made with a edible funfetti cookie dough. The cookie dough is filled with Easter themed sprinkles, and covered in melted white chocolate. These easy homemade candies make the perfect no bake treat to make this Easter or spring.

To make the cookie dough, the flour is first heated in the microwave for about 40 seconds. Mix the butter, sugar and vanilla extract together in a large bowl until smooth. Add in the heated flour, and mix until it is fully combined. Fold in the sprinkles. Roll the cookie dough into balls, then freeze them while you melt the chocolate. Melt the white chocolate chips in the microwave until it is fully melted and smooth. Fully coat each truffle into the melted chocolate, and let sit until the chocolate has completely set.

Easter Cookie Dough Truffles

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour, heated in the microwave
  • 1 teaspoon vanilla extract
  • 1/2 cup Easter sprinkles
  • 12 oz. white chocolate chips

Instructions
 

  • Place the flour into a microwave-safe bowl, and heat in the microwave for about 40 seconds. In a large bowl, combine butter with sugar until fluffy. Add in the vanilla extract, and mix until smooth.
  • Add in the heated flour, mix until it is fully combined. Fold in the sprinkles. Roll the cookie dough into balls, and place onto a plate. Freeze for at least 20 minutes.
  • Place the white chocolate chips into a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth. Use a fork to fully coat each truffle into the melted chocolate. Set back onto a plate, and let sit until the chocolate has completely set.
