Double Chocolate Oatmeal Cookie Bars

Soft and chewy oatmeal cookie bars filled with tons of chocolate flavor from cocoa powder and chocolate chips folded into the cookie dough. These easy cookie bars are perfect to bake for any occasion. Everyone will love the soft and chewy texture of the cookie bars and the delicious chocolate flavor.

The cookie dough is made similar to a classic oatmeal cookie dough, except for the addition of cocoa powder and chocolate chips added into the cookie dough. Evenly press the prepared cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Double Chocolate Oatmeal Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, quick oats, cocoa powder, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Fold in the chocolate chips. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
