Double Chocolate Oatmeal Cookie Bars

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, quick oats, cocoa powder, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth.
  2. Add in the flour mixture, mix until it is fully combined. Fold in the chocolate chips. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
