Tomato soup is a classic winter comfort food meal. No cooking is required to make it, everything cooks in the crock-pot. Cans of both crushed tomatoes and whole tomatoes are used, along with vegetable broth, a large diced onion, garlic and seasonings. Then when you are ready to eat it, just blend everything together and you have a warm bowl of soup all ready. This tomato soup is both vegan and gluten-free, making this the perfect meal for every diet.
It is very simple to put this soup together, nothing needs to be cooked. A can of crushed tomatoes and a can of whole tomatoes, along with the juices are placed into a large crock-pot. Add a diced onion along with vegetable broth, salt, pepper and minced garlic. Cover the crock-pot and cook it on low for 6-8 hours or on high heat for 3-4 hours. Serve with grilled cheese sandwiches for a hearty cold weather meal.
Crock-Pot Tomato Soup
Ingredients
- 1 ( 28 oz.) can crushed tomatoes
- 1 ( 14 oz.) can whole tomatoes
- 1 large onion, diced
- 4 cups vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 cloves garlic, minced
Instructions
- Place all of the ingredients into a large crock-pot. Cover and let cook on low for 6-8 hours, or on high for 3-4 hours.
- Blend soup using either an immersion blender or blend in batches until smooth.
