Crock-Pot Chicken Cornbread Dressing

Easy cornbread dressing with chicken and hard boiled eggs make a delicious meal or Thanksgiving side dish. This meal is cooked in the crock-pot, making it easy to prepare in the morning, then by dinner, you have a warm and comforting meal. Serve with a side of mashed potatoes and your favorite vegetables for a delicious winter meal.

For the cornbread, you can either bake your favorite recipe or use a bagged mixed instead. Bake the cornbread according to package directions. Once cool enough to handle, crumble the bread into a large bowl and mix with the remaining ingredients. Press the dressing mixture into a greased crock-pot. Cover and let cook on low for 6-8 hours or on high for 3-4 hours.

Ingredients
  

  • 1 9-inch round pan cornbread, cooked, crumbled
  • 2 1/2 cups chicken, cooked and diced
  • 1/2 cup diced onion
  • 2 stalks celery, diced
  • 1 tablespoon poultry seasoning
  • 1 ( 10 oz.) can cream of chicken soup
  • 1 cup melted butter
  • 2 hard boiled eggs, chopped

Instructions
 

  • Combine all of the ingredients in a large bowl. Press mixture into a large greased crock-pot. Cover and cook on low for 6-8 hours.
