Crispy Fried Onion Mac and Cheese Cups

Crispy mini mac and cheese cups topped with crispy french fried onions make the perfect appetizer for holidays such as Thanksgiving or Christmas. Or it would also make a great appetizer to serve for game day or the super bowl. These mac and cheese cups are creamy and cheesy, with a delicious crispy topping that everyone will love. You can also make these mac and cheese cups for a side dish to go alongside any meal. 

The pasta is first cooked according to package directions. To make the creamy cheese sauce, butter is first melted in a saucepan over medium heat. Flour is added and cooked until browned. Milk, cheese, and seasonings are added to the mixture, and cooked over medium heat until the cheese has completely melted and the sauce has thickened. Mix the sauce with the cooked pasta along with 1/2 of the french fried onions. Evenly divide the mac and cheese between greased muffin cups. Top with the remaining fried onions and bake until crispy.

Ingredients
  

  • 8 oz. elbow pasta
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 container french fried onions

Instructions
 

  • Preheat oven to 350 F. Cook pasta according to package directions, drain and place into a large bowl. Melt butter in a large saucepan over medium heat. Add in flour and cook for a minute to brown.
  • Add in milk, cheese, salt, and pepper. Continue to cook over medium heat, while whisking constantly until thickened. Mix sauce with cooked pasta. Add in 1/2 of the fried onions.
  • Evenly divide mac and cheese mixture between 12 greased muffin cups. Top with the remaining fried onions. Bake for 15-20 minutes.
